Introduction

This is like the great soup you get in chinese restaurants, its classic comfort food and pretty healthy, too. This is like the great soup you get in chinese restaurants, its classic comfort food and pretty healthy, too.
Number of Servings: 4

Ingredients

    4 cups chicken broth or bouillon (can use low sodium broth)
    2 eggs, beaten
    ground ginger to taste
    1/4 cup coconut milk
    1 cup chopped onion (or to taste)
    black pepper (optional)
    White pepper (optional)

Directions

in a large saucepan, bring chicken stock to a boil. Add ginger, and 3/4 of onions and allow to boil for a few minutes. Add egg from about 8in above pan, pouring through the tines of a fork. Stir rapidly for about one minute to form shreds of egg. Serves 3-4
