Number of Servings: 6


    2 c fiber one cereal
    3 TB Salted butter
    1 TB cinnamon
    1 egg

    4-5 cups frozen, unsweetened mixed berries
    1 TB lemon juice
    3 TB cream cheese
    3 TB cornstarch, dissolved into a glue-like paste with about 1-2 TB cold water.
    1 tsp vanilla

    Topping (optional): Cool-whip lite


Pulse pie crust ingredients, with the butter melted, using a food processor until the mixture appears like wet sand. (Sometimes I have to add a bit more liquid to get it to the desired consistency). Press the mixture into 6 jumbo-sized muffin cups and bake at 350 degrees for 10 minutes. Remove from heat and let cool.

Add the frozen berries to the food processor and give it about 5 1-second pulses. Add the remaining ingredients and GENTLY mix. Wait about 20 minutes or so for the berry mixture to thaw a bit and then re-mix until loosely combined. Scoop the filling into the now-cooled muffin tins and bake at 350 for 30 minutes, or until the topping appears to have solidified some. Remove, let cool, and top with cool whip. Enjoy!
