Introduction

Ingredients

    1/2 lb boneless sirloin steak
    1/2 each medium green, red and yellow peppers julenned
    1 tbsp. choped red onion
    1 garlic clove minced
    1 tbsp. minced fresh cilantro
    1/4 dried rosemary, crushed
    4 flour tortillas (6 inch)
    6 cherry tomatos, halved
    1/4 cup sliced fresh mushrooms
    1 cup shredded part-skim mozzarella cheese

Directions

Grill steak to medium rare and let stand for 10 minutes to rest.
In large skillet coated with cooking spray, saute peppers, onion and garlic for 5 minutes or until tender. Sprinkle with cilantro and rosemary.
Place two tortillas on baking sheet coated with cooking spray. Cut steak in thin strips and place on tortillas. Using slotted spoon, place pepper mixture over steak and top with tomatoes, mushrooms, cheese and remaining tortillas. lightly spray top of tortillas with cooking spray.
Bake at 425 degree for 5-10 minutes until golden brown and cheese is melted. Cut each quesadilla into 4 wedges.
