    Iceberg Lettuce (salad), .5 cup, shredded or chopped
    Cucumber (peeled), .5 cup, pared, chopped
    Walnuts, .5 oz (14 halves)
    Chicken Breast, no skin, 3 ounces
    Apples, fresh, .25 cup, quartered or chopped


Season chicken with garlic, basil, cilantro, cumin. Saute in 2 tsp. olive oil. Cool, cut into bite size pieces. Mix remaining ingredients together and add cooled chicken. Mix well. Drizzle with your favorite dressing. Serves 1.
