A nice way to use up leftover chicken or pork. A nice way to use up leftover chicken or pork.
Number of Servings: 4


    1 Tablespoon oil
    1 medium onion, chopped
    2 cloves garlic minced
    9 oz leftover cooked white meat chicken, or lean pork roast, shredded
    4 teaspoons chicken base
    1 15 oz can hominy
    1 10 oz can mild rotel tomatoes
    1/2 teaspoon salt
    1/8 teaspoon pepper
    1 can evaporated skim milk


Put oil in medium sized stock pan. Heat and add onions and garlic. Cook til tender. Add shredded meat and cook until a bit brown. Add all other ingredients except canned milk. Simmer for 30 minutes. Add milk and gently heat back thru til a simmer but do not boil. Garnish with fat free sour cream, light shredded cheddar, light tortilla chips, fresh avocado or I use Fage 0 yogurt.
