These chips are oven baked w/ olive oil. These chips are oven baked w/ olive oil.
Number of Servings: 8


    2.5 lbs red potatoes w/ skins
    1 cup sliced onion
    4 tbsp oliveoil
    salt and pepper to taste


Heat oven proof pan in 425 degree oven. Meanwhile clean and slice potatoes in food processor or mandolin. Slice onion thinly. Take pan out of onion and put 2 tbsp olive oil in pan. Add 1/2 potatoes, onion, salt and pepper. Add remaining olive oil, potatoes, onion, salt and pepper. Bake in oven until desired doneness. This may be cooked in a cast iron skillet for added crispness. Makes 8 1/2 cup servings
