    1 can of red kidney beans, rinsed and drained
    1 cup white rice (uncooked)
    1 cup cubed lean ham
    1 can low sodium fat free chicken broth
    1.5 cups water
    1/4 cup tomato paste
    1 bay leaf
    1 tsp Cajun seasoning
    1/8 tsp red pepper
    1/2 tsp olive oil
    3/4 cup onion, chopped
    3/4 cup celery, chopped


1. Combine beans, rice, ham, broth, water, tomato paste, bay leaf, Cajun seasoning, and red pepper. Bring to a boil.

2. Meanwhile, heat oil in skillet and cook bell pepper, onion, and celery for five minutes. Add to bean mixture and cover, simmer for 20 to 25 minutes until rice is tender.

Serves 4.
