This is great for a meal when completed with a salad. This is great for a meal when completed with a salad.

    *Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 1.5 cup
    Beans, black, 1.5 cup
    Yellow Sweet Corn, Canned, 1.5 cup
    Salsa, .5 cup
    Cilantro, dried, 2 tbsp
    Green Olives, 85 grams
    Extra Virgin Olive Oil, Kirkland (1 tbsp=3tsp), 8 tsp
    Garlic powder, 1 tbsp (remove)


Cook Quinoa according to package directions. Drain, rinse and heat black beans and corn. Chop olives add to beans and corn. Add Quinoa. Add salsa, olive oil, cilantro, garlic powder. (If you like other seasonings in your southwest foods - add them). I serve warm for a meal but it can be mixed in a salad. Makes 6 - 1 cup servings
