Introduction

Number of Servings: 4

Ingredients

    1 lb lean lamb roast, cubed
    1 1/2 cup chopped onion
    1 tbsp olive oil
    3 tbsp chopped garlic
    2 tbsp paprika
    1 tbsp cumin powder
    1 tbsp cinnamon
    1/2 tsp or pinch of safron
    1 - 14oz can Northern Beans (or garbanzos)
    1 - 14oz Fire Roasted Diced Tomatoes
    1 cup frozen chopped spinach
    4 cups low sodium vegetable broth (or chicken)

Directions

Heat up olive oil in soup stock pan. Add cubed lamb and onions - brown. Add garlic. Add spices and cook for a couple minutes. Add broth, diced tomatoes with juice, drained and rinsed beans. Simmer on low covered for a couple hours. Add chopped spinach. Cook for an additional 15 minutes. Makes 4 - 2 cup servings. May serve over rice. Also good with a dollop of sour cream on it.
