Introduction

Number of Servings: 8

Ingredients

    4 C. (approx) cooked brown rice/wild rice medley
    2 14.5 oz. cans diced tomatoes with juice
    1T. olive oil
    3 cloves garlic, crushed
    1 small onion, chopped
    2 T. dried basil
    Large bunch of swiss chard, chopped
    16 oz. can black olives, halved or sliced
    1/2 C. grated parmesan cheese

    (optional: 1/4 C. red wine, 1 T. tomato paste)



Directions

Makes 8 1- cup servings

While rice is cooking, prepare the following:

Saute garlic and onion in olive oil in large skillet. Add basil and saute until onion is soft. Add chopped swiss chard and cook until wilted. Add tomatoes (and wine, and tomato paste if desired) and simmer about 15-20 minutes. Add olives, heat through. Add cooked rice and grated cheese and mix well. Serve as-is, or bake in casserole in 350 oven until bubbling with a little extra grated cheese on top.
