A delicious, spicy, good-for-you muffin. A delicious, spicy, good-for-you muffin.
Number of Servings: 32


    1 1/4 cups whole wheat flour
    3/4 cup dark brown sugar
    1 tp baking powder
    1/2 tp baking soda
    1/2 tp salt
    1/2 tp nutmeg
    1 tp cinnamon
    1/2 tp cardamom
    1 egg
    1/2 cup unsweetened applesauce
    1 cup chai tea (brewed with 2 tea bags)
    1/4 cup canola oil
    1 tp vanilla
    3/4 cup raisins


1. Preheat oven to 350 d. Lightly spray mini muffin pans.
2. Brew the tea. Reserve 1/4 cup. Soak the raisins in the remaining tea while mixing the batter.
3. Mix flour, sugar, baking powder, baking soda, salt, nutmeg, cinnamon and cardamom in a large bowl.
4. Whisk the egg, applesauce, chai tea, oil and vanilla in a small bowl. Add the mixture to the dry ingredients and mix, just until combined.
5. Drain the raisins and add to the batter.
Pour batter into mini muffin pans. Bake at 350d for 15 to 20 minutes, or until a wooden toothpick inserted into center comes out clean.
Makes 32 muffins.

This recipe may also be used to make a loaf of bread or regular muffins. If you bake a loaf, leave it in the oven for 45 - 55 mins.
