Ingredients

    3-15 oz. cans black beans, rinsed and drained
    1-11 oz. can white shoepeg corn drained
    1-11 oz. can yellow sweet corn, drained
    3-10 oz. can Rotel tomatoes, drained
    1 red bell pepper , chopped
    1 green bell pepper, chopped
    2 large tomatoes, seeded and drained
    1/2 red onion, chopped
    1/2 large bunch cilantro, chopped without stems
    1/4 c. red wine vinegar
    1 lemon, juiced
    2 large cloves garlic, minced
    1/8 t. cayenne pepper
    1/8 t. chili powder
    1/8 t. cumin
    1/4 t. salt

Directions

Mix all together and refrigerate in a non-metallic container.
Makes 16-1 cup servings
