    4 C. Rhubarb, cut up in pieces
    1 3/4 C. Sugar
    1 T. Flour
    1 T. Tapioca
    1 T. Corn Starch
    1/2 tsp. Salt
    2 Large Eggs
    1 tsp. Vanilla


Mix together all dry ingredients. In a separate bowl, beat eggs and vanilla. Add dry ingred. to egg mixture. Then add rhubarb. Put bottom pie crust in pie plate, add filling, top with top crust. Cut slits in top crust. Bake 400 degrees for 15 minutes, then 350 degrees for 45 minutes. Serves 8.

    If you have real sweet rhubarb, you can cut the sugar down, to at least 1 1/2 C. But if your rhubarb is more on the sour side, you will want more.
