Number of Servings: 4


    1/2 c diced mushrooms
    1.2 c diced onions
    1.5 c sliced snap peas
    1 Tbsp olive oil
    3 servings turkey smoked sausage
    4 extra large eggs
    4 egg whites
    4 slices trader joes lite cheddar
    2 slices trader joes lite provolone
    1/4 c 2% milk
    1 pinch salt
    1 tsp herbs d provence (optional)


saute onions in 1 spray of oil or about 1 tsp olive oil, when clear add sausage, I chop up mine to put meat in every bite. Add your other veggies, when cooked place in the bottom of a sprayed quiche pan or deep dish 9-10 inch pie pan. Layer diced cheese over the top. In a bowl wisk, milk, spice, salt, 4 eggs and 4 additional egg whites. When encoporated, pour over the top of cheese, place on a cookie sheet and bake for 30-35 min until knife comes out clean. Calories are for 1/4 of quiche which is a nice serving, if needed just take an 1/8th and use calories as 1/2 serving. Any veggies that are not watery will work in this, I just used what my kids like.
