Number of Servings: 12


    * *Shortening, Crisco, 8 tbsp (remove)
    * Neufchatel Cheese, 3 oz (remove)
    * *Splenda Brown Sugar Blend, 48 tsp
    * Banana, fresh, 2 medium (7" to 7-7/8" long)
    * Egg, fresh, 1 large (remove)
    * Oikos Organic Greek Yogurt, Plain, 2.75 oz
    * *Flour, white, 1.5 cup (remove)
    * Semisweet chocolate, .75 cup mini chips
    * Baking Powder, 1 tsp (remove)
    * Baking Soda, 1 tsp (remove)
    * Salt, 1 dash (remove)


Blend together shortening, neufchatel, and Splenda until well mixed. Add bananas, egg, and yogurt again until well mixed.

In another bowl, combine the rest of the ingredients. Stir the dry ingredients into the wet ingredients until just mixed.

Pour into a bread pan and cook 1h 15m.

    This looks good. I'm going to try and tweak a little more -maybe some coconut flour/ spelt flour? I'll report back! :) - 5/1/09

    I actually used 1/2 cup whole wheat flour in lieu of 1/2 cup of white today, and it turned out excellent. I probably use a tad less than 1.5 cups altogether, too. We like it moist and dense, which is good cuz I don't eat more than a cheese cube sized piece at a time. Can't wait to see what u do!
