i had a recipe similiar to this, but i lost it. i think my recreation is fairly close to the original, you couls substitute nayonaise, or vegenaise to make this vegan. i had a recipe similiar to this, but i lost it. i think my recreation is fairly close to the original, you couls substitute nayonaise, or vegenaise to make this vegan.

Ingredients

    1 can chick peas, drained and rinsed
    .5 cup chopped onion
    2 TBSP pickle relish
    1 tsp mustard
    .25 cup smart balance omega plus mayonaise
    .5 cup chopped celery

Directions

whirl all items except celery in a food processor until desired consistency is reached. empty into bowl and mix in celery.

if using this for sandwiches, you can usually get about 8 servings, if serving as a salad, about 6.
