This is a healthy twist on an old time favorite. This is a healthy twist on an old time favorite.
Number of Servings: 16


    1 1/2 c. miniature marshmallows
    1 (3 oz.) box strawberry sugar-free Jello
    2 (10 oz.) pkg. frozen strawberries
    3 egg substitute
    1 1/2 c. Splenda
    1 c. non-fat milk
    1 tsp. vanilla
    1/2 c. softened I Can't Believe It's Not Butter
    1/2 tsp. salt
    2 1/2 c. flour
    3 tsp. baking powder


Generously grease a 13 x 9 inch pan. Cover bottom with marshmallows. Set aside.
In medium bowl, mix Jello with frozen sliced strawberries including juice. Set aside.

Combine following ingredients and beat 3 minutes at medium speed: eggs, sugar, milk, vanilla extract, butter, salt, flour, baking powder.

Pour batter over marshmallows. Spoon strawberry mixture over batter. Do not mix the three layers. Bake at 350 degrees for 45 minutes or until golden brown.

NOTE: During baking, marshmallows will melt and rise to the top while strawberries will sink to the bottom.
