This filling is great in 1/2 a whole wheat pita.

    9 oz diced cooked chicken breast
    1 stalk celery, cut into 1/4-inch dice
    2 scallions, trimmed and thinly sliced or 1/4 cup sweet onion cut into 1/4-inch dice
    10 green grapes - cut in half
    1 teaspoons finely chopped fresh tarragon
    1 oz chopped walnuts
    1/4 cup light mayo
    Juice from 1/4 of a lemon
    1 teaspoon Dijon mustard
    Freshly ground black pepper


In a mixing bowl, toss together the chicken, celery, scallions, walnuts, grapes and herbs. Set aside.

In a small bowl, whisk together the mayonnaise, lemon juice, mustard, and pepper to taste. Add to the chicken and mix gently until combined. Refrigerate until ready to serve.
