    4 largs eggs
    1/8 cup nonfat milk
    1/4 part skim mozzarella cheese
    1/2 avocado, diced
    5 slices tomato, diced
    dash salt
    dash pepper


makes 2 servings

1. Combine eggs, milk, salt and pepper. Whisk together.
2. Pour eggs into frying pan and cook until set - drawing egg away from side of pan to allow uncooked egg to flow underneath.
3. Add avocado, tomato, and mozzarella. Cover pan and allow cheese to melt.
4. Fold omelet in half; cut into two servings and serve immediately.
