Introduction

Ingredients

    8 oz. of lasagna noodles, 9 noodles (reg or no boil)
    3 cups of your favorite marinara sauce
    2 cups of cottage or ricotta cheese
    1 egg
    1 16 oz package of frozen cut spinach (or 5 cups of fresh)
    10 oz of provolone or mozeralla cheese
    2 oz parmesan cheese


Directions

Preheat oven to 400. If needed boil noodles while making the filling.
In a large mixing bowl combine cottage cheese, egg and spinach. If frozen spinach is used set in strainer to thaw prior to mixing in w/ cheese. If you would like to add any seasonings now would be the time, garlic, basil & oregano our my favorites. Blend all ingrediants together.
To form lasagna start w/ 3 noodles lay them side by side in a 13 x 9 in. baking dish. I recommend spraying dish w/ cooking spray prior to starting, or covering the bottom of dish w/ a light amount of sauce. Spread 1/2 of the cheese/spinach mix on the noodles, next add 1/3 of the provolone cheese then 1/3 of the sauce. Top this layer with 3 more noodles and repeat the layers. After the last 3 noodles are placed on top pour on remaining sauce and top w/ remaining provolone cheese and parmesan cheese. Cover dish w/ aluminum foil and place in oven for 40 min. For a brown top remove foil and heat another 10 mins. Cut into 6 pieces and serve.
