Number of Servings: 6


    Cream Cheese, 8 oz
    Half and Half Cream, .5 cup
    Egg, fresh, 2.375 large
    Vanilla Extract, 1 tsp
    Lemon juice, 1 tbsp
    lemon zest - 1/2 tsp
    3 packets stevia

    Sour Cream, .5 cup
    1 packet stevia
    Strawberries, fresh, 1 cup, sliced


Makes 6-8 servings. Nutrition info calculated for 6 servings. Blend all but sour cream and strawberries in blender till perfectly smooth.

Put in muffin tins sprayed with non stick spray and bake at 350 for 15 minutes. Cool completely and chill in fridge

Mix 1 packet of stevia with sour cream and cover the top of each mini cheesecake. Top with sliced strawberries.
