Introduction

This is a new twist on an old fashioned salad! Lighter in both fat and calories. This is a new twist on an old fashioned salad! Lighter in both fat and calories.

Ingredients

    1 c. apple, diced
    1 c. pineapple, fresh, diced
    1 c. green seedless grapes, halved
    1/2 c. raisins
    1/2 c. mandarin oranges
    1 large stalk celery, diced
    8 medium leaves, bib lettuce
    3/4 oz. coconut, toasted

    Dressing:
    1 c. plain fat free yogurt
    1/4 c. low fat mayo ( I use smart balance light)
    1/4 tsp. ground nutmeg (or to taste)
    2 or 3 tsp. splenda (or to taste)

Directions

Mix dressing ingredients together

Mix all fruits except coconut together and mix with dressing.

chill ( 30 minutes) to blend flavors then divide salad on to the bib lettuce leaves and sprinkle with 1 tsp toasted coconut .
