Ingredients

    3 medium bell peppers (red, yellow, orange), cut in half and seeded
    6 cloves garlic, unpeeled
    5 large basil leaves
    1 T fresh chopped rosemary
    1 tsp. balsamic vinegar
    1 tsp olive oil
    1 T water
    1/8 tsp. salt
    1/8 tsp. pepper

Directions

Place peppers cut side down on a baking sheet. Broil until blackened. Place peppers in a zip-close plastic bag for 15 minutes. Remove and peel of skin. Slice into strips.

Microwave unpeeled garlic on high for 1 minute. Peel off skin.

Place garlic, olive oil, vinegar, herbs, salt, pepper and water in food processor or blender. Puree.

Add garlic mixture to peppers and toss to coat.

    I didn't have rosemary, so I went a little heavy on the basil added some dried oregano. My only regret with this recipe is that it doesn't make very much. Next time I'll double the recipe. Full of flavor, low in fat and sodium--wonderful! - 8/23/09
