Lovely gingerbread with candied ginger pieces. Serves 12. Lovely gingerbread with candied ginger pieces. Serves 12.
Number of Servings: 12


    12 oz self raising flour
    6 oz caster sugar
    4 oz margarine
    1 egg
    200g pot Mullerlight Vanilla Yogurt
    1 tsp ground ginger
    1 tsp mixed spice
    1tbsp candied (crystallized) ginger


Preheat the oven to 180C/350F/Gas 4

Put all the ingredients except the candied ginger in a food processor and blend until smooth and well mixed

Stir in the candied ginger.

Grease a 1lb loaf tin.

Spoon the mixture into the tin and level the top

Cook in the oven for 45 minutes until risen and golden - NB I sometimes have to put mine back for an extra 10-15 minutes

Remove from tin and cool on a wire rack.

Cut into slices - makes 12
