Introduction

Ingredients

    1/2 cup flour
    1/2 cup whole wheat flour
    2 tbsp cornmeal
    1 tablespoon splenda
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    4 tablespoons dry buttermilk
    1/4 teaspoon ground cinnamon
    1/4 cup egg substitute
    1 cup water
    2 tablespoons cooking oil

Directions

In a medium bowl combine all dry ingredients. Make a well in the center; set aside.
In another bowl combine egg substitute through cooking oil. Add to flour mixture. Stir just until moistened (batter should be lumpy).
For each pancke, pour or spread about 1/4 cup of the batter into a 4 inch circle onto a hot, lightly greased griddle or heavy skillet. Cook over medium heat aout 2 minutes on each side or until pancakes are golden brown, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry. Serve warm.
