    1 package firm tofu (frozen and drained)
    1/2 c. bbq sauce
    1/2 c. orange juice
    1/2 c. maple syrup
    1/2 tsp. pepper
    cooking spray or vegan margerine


Gently press the water out of your tofu using two plates and a weight (a book works, too). While your tofu is working, mix together the bbq sauce, orange juice, maple syrup & pepper. Get the biggest plate that will fit in your microwave and either spray it with cooking spray or coat lightly with margarine. Gently dry off your tofu, and cut it into 1/4 in. squares. Pour 1/2 of your bbq mix onto the plate. Arrange your tofu so that there are not many overlapping pieces. pour the rest of the sauce on the top and pop it into your microwave. Microwave on high for 10 minutes. Let rest for 5. Check your ribz, they should be firm...if not, microwave in 3 minute intervals until they're the desired consistency. DIG IN! (makes 4 servings, and is great over a baked potato!!)
