Introduction

Ingredients

    2 tablespoons olive oil
    1 small onion, finely diced
    1 garlic clove crushed
    2 small sweet potatoes, peeled and chopped
    250 grams broccoli, chopped
    300 grams spinach, chopped
    900 ml chicken or vegetable stock
    salt and pepper to taste

Directions

1. Heat the oil in a saucepan then add the onion and garlic and saute for 3mins.

2. Peel the potatoes and chop into small bite sized pieces.

3. Add the chopped potatoes, broccoli, spinach and stock to the pan and bring to the boil.

4. Simmer for 15 minutes.

5. If preferred the soup can be pureed or left as a chunky soup. Serve with a side salad or granary bread.

    Very Good
    This is really very good. I used an extra onion instead of the garlic and added the spinach for just 2 minutes before blending. - 2/9/12
