Number of Servings: 10


    Powdered Sugar, 1 cup, unsifted
    Low fat cream cheese, 226.8 grams
    Pie crust, frozen, ready-to-bake, 1 crust, single 9"
    Comstock Light Cherry Pie Filling, 3 cup
    Vanilla Extract, 1 tbsp
    Almond Extract, 0.5 tsp
    Heavy Whipping Cream, 1 cup, whipped


Place one set of beaters and a bowl (glass or metal) in the freezer.

Bake the pie crust per instructions.

Blend cream cheese, powdered sugar, and vanilla together in one bowl.

Mix pie filling and almond extract in another bowl.

Use frozen beaters to whip the heavy whipping cream in the frozen bowl until it is fluffy.

Fold the whipped cream gently into the cream cheese mixture. Place this into the pie crust. Top with pie filling. Refrigerate.

This may work well with Splenda, but I haven't been able to try it, yet. If it does, it would save a lot of calories.

I have also seen recipes for mini-cheesecakes on Nilla Wafers using Splenda instead of powdered sugar.
