Number of Servings: 3


    * Brown Sugar, .5 cup, packed
    * Cornstarch, 4 tsp
    * Chicken Broth, .5 cup
    * Red wine vinegar, 1/3 cup
    * Green Peppers (bell peppers), 1/4 cup
    * Pimiento, stemmed and peeled, 2 tablespoons (chopped)
    * Light Corn Syrup, 2 tbsp
    * Soy sauce, low sodium, 2 tbsp
    * Ginger, ground, 1.5 tsp
    * Garlic, 1 clove (minced)
    * Chicken Breast, no skin, 2 breast, bone and skin removed


Cut chicken into bite size pieces and cook on medium heat in a sauce pan until cooked through. Set aside (keep warm).
In a small saucepan stir together brown sugar and cornstarch.
Stir in broth, vinegar, bell pepper, pimiento, corn syrup, soy sauce, ginger, and garlic.
Cook and stir until thickened and bubbly.
Add chicken to this mixture while it is still on the stove.
Cook together, while stirring for 2 - 5 minutes.
Keeps in the fridge for 3 days after cooking (if covered).
This recipe serves 3.
