Ingredients

    2 tablespoons light butter
    5 teaspoons minced garlic
    1/4 cup julienned carrot
    4-5 baby bok choy
    6 1/2 ounces fresh snow peas
    1/2 cup low sodium, fat free chicken or vegetable broth

Directions

1. Rinse bok choy and cut off the bottom 1/2-inch so the salks are seperated


2. Melt butter in a large frying pan over medium heat. Add the garlic and carrot. Sautee until the garlic just begins to brown.


3. Add the bok choy, snow peas and broth. Simmer the vegetable mixture for 6-8 minutes, stirring occasionally. Serve with a slotted spoon.


Optional: season with salt & pepper
