Introduction

Ingredients

    1 lb Ground Turkey Breast, extra lean
    1 Tbsp Garlic, minced
    1 Tbsp Ginger, minced
    14 oz Shredded Cabbage
    1 Red Pepper, medium, sliced
    6 oz Carrots, shredded or matchstick
    1/2 Cup Snow Peas
    3 oz Shelled Edamame
    1 Tsp Sesame Oil
    4 Tbsp Lite Soy Sauce
    3 Tbsp Lime Juice
    2 Tbsp Rice Vinegar
    1 Tbsp Cornstarch
    1 Tbsp Peanut Sauce - Bangkok Padang

Directions

1) In a large skillet or wok, coated with cooking spray, cook the turkey on medium heat. Add garlic and ginger and cook for a minute or two more.
2) Add cabbage, red pepper and carrots. Stir and cover for about 5 minutes to allow cabbage to wilt.
3) Uncover and add snow peas, edamame and sesame oil. Mix well and heat through.
4) In a small bowl, mix together soy sauce, lime juice and vinegar. Stir in cornstarch until no lumps remain. Add to pan along with peanut sauce. Heat until sauce thickens. Mix well.
