    1 tbsp vegetable oil or cooking spray
    1 lb ground turkey 93% lean
    1 1/2 cups enchilada sauce
    1 1/2 tsp ground cumin
    1 package frozen chopped spinach, thawed and well drained
    8 oz. light cream cheese, cubed
    12 6" corn tortillas
    1 can diced tomatoes (no salt) in juice
    1 cup low-fat shredded cheddar cheese (4 oz)


In medium skillet over medium-high heat, heat oil or cooking spray. Add turkey and cook until no longer pink. Pour off fat. Add 1 cup enchilada sauce, cumin and spinach. Heat to a boil. Reduce heat to low and cook 5 minutes. Add cream cheese and stir until melted. Spread about 1/3 cup of the mixture down the center of each tortilla. Roll up and place seam-side down in 3 quart shallow baking dish that has been sprayed with cooking spray. Combine tomatoes and remaining enchilada sauce. Spoon over enchiladas. Cover and bake at 350F for 35 minutes. Uncover and top with cheese. Bake for 5 more minutes until cheese is melted. Serves 6
