    2 eggs
    1/4 cup Splenda Brown Sugar
    1/4 cup applesauce
    1/4 tsp vanilla
    1 cup flour
    1 tsp baking powder
    1/4 tsp baking soda
    1/4 tsp each cinnamon, ginger, nutmeg
    1/4 tsp salt
    1 cup carrots
    1/2 cup coconut
    1/3 cup raisins
    1/4 cup walnuts, chopped


In large bowl, beat eggs and brown sugar til light. Beat in applesauce and vanilla. In separate bowl, blend together flour, baking powder, baking soda, spices and salt. Add to egg mixture and blend til moistened. Blend in carrots, coconut, raisins and walnuts. Spoon into muffin cups. Bake at 350 degrees F for 20-25 mins.
