Left over chicken and you have dinner in no time. Left over chicken and you have dinner in no time.

    16 oz shredded or chopped chicken breast
    1 16 oz jar of Pace Picante Sauce
    1 10 oz can old El Paso Enchilada sauce
    1 1/2 C Fat Free Shredded Cheese
    1 pkg Mission Low Carb 8" Flour Tortillas


Chop or shred the left over chicken. Mix with the jar of sauce. Place 1/3 C of meat mixture down each tortilla. Roll up and place seam side down in an 8x11 pan. Cover with the enchilada sauce. Bake 25 minutes covered with foil. Uncover sprinkle with shredded cheese and bake until melted.
