    1 cup red split lentils
    1 cup brown basmati rice
    1/2 tsp salt
    1/2 tsp basil
    1 tsp onion powder
    5 cranks black pepper
    1/2 tsp oregano
    1/4 tsp dried chile flakes
    14 oz (400mL) diced plum tomatoes
    14 oz (400mL) crushed tomatoes
    1/8 cup olive oil
    1/2 medium onion, chopped
    1.5 garlic cloves, minced
    1 medium carrot, diced
    1.5 celery stalks, diced
    1/2 green pepper, diced
    1 1/4 cups low fat cheddar cheese, grated
    800mL water


Place first 10 ingredients in a 9" x 13" casserole dish. Set aside.
Heat the oil in a frying pan over medium-high heat and begin frying the onions and garlic while you prepare the other ingredients. Once the onions are soft, add the carrot, celery, and green pepper. Saute until the onion and garlic are slightly caramelized and crispy. Stir into the casserole dish. Add the water and mix.

Cover the casserole dish with aluminum foil and bake at 350F for 40 minutes. Remove from oven and stir. The mixture should be moist but not soupy (if it appears too dry, add water). Season to taste with salt and pepper. Top with cheese and bake for 20 more minutes, uncovered.

Remove from oven and let stand 10 minutes before serving.
Divide into 8 pieces and serve.

If you do not have brown basmati rice, substitute white basmati and decrease water by 200mL.
