Introduction

Ingredients

    One bunch fresh asparagus, ends snapped off (could probably also be frozen)
    1 lb. bag frozen haricot verts (or use fresh or regular green beans--for fresh you will need to snap the ends off)
    4 scallions, cut in thirds
    1/8 cup olive oil
    Salt and pepper to taste (nutrition info includes 1 tsp. of each)
    Juice of 1 lemon or to taste

Directions

Preheat oven to 425.
Put all the vegetables on a large sheet pan where they fit in a single layer (or use two small pans like I do). Sprinkle with olive oil, salt, and pepper. Toss to coat.
Bake 15-20 minutes or until veggies are brown in parts and crisp-looking.
Sprinkle with lemon juice or serve with lemon wedges.
