Ingredients

    Bush's, Black Beans, 1 can
    1/2 red onion, diced
    Yellow Sweet Corn, Canned, 1 can
    Juice from 1 lime
    Jalapeno Peppers, 1 pepper chopped and seeded
    Olive Oil, .25 cup
    Red Ripe Tomatoes, 2 large whole, chopped
    Cilantro, raw, to taste
    1 tsp salt
    4 Boneless, Skinless Chicken Breast, cut into bite sized pieces
    *Canola Oil, 1 tbsp

Directions

To prepare salsa, combine first 9 ingredients and toss to combine.
Heat oil in pan. Season chicken with a little salt and pepper. Cook chicken until done.

Serve with salsa over rice. (Rice not included)
