Introduction

This vegan dish is amazing, whether you want to treat yourself on a night home alone or entertain a friend. Can easily be doubled (tripled, etc.) to feed more people. This vegan dish is amazing, whether you want to treat yourself on a night home alone or entertain a friend. Can easily be doubled (tripled, etc.) to feed more people.

Ingredients

    4 oz. pasta (of your choice, but makes the most sense to use fettuccini)

    1/2 tbsp. Earth Balance
    10 - 15 slices baby portabella mushrooms
    1/4 c. coarsely chopped sweet onion
    minced garlic (optional)

    2 tbsp. Earth Balance
    1/4 c. soy creamer
    2 tbsp. vegan parmesan
    herbs to taste (basil, oregano, etc.)
    salt and pepper to taste

Directions

This can easily be prepared all at once, if you have one medium saucepan, one small saucepan, and one frying pan. It takes the sauce and vegetables about 5 minutes to cook (once the margarine melts) so if cooking everything simultaneously, add ingredients to margarine when 5 minutes remain in pasta cooking time.

For Pasta:
Cook according to package directions

For Sauce:
Add 2 tbsp. Earth Balance to small saucepan. Heat over medium-low heat until melted. When margarine is melted, add soy creamer and vegan parmesan. Whisk until well blended and allow to simmer. Add herbs and salt and pepper. Cook for 5 minutes, stirring frequently.

For Vegetables:
Add 1/2 tbsp. Earth Balance to frying pan and heat over medium heat until melted. Add mushrooms, onion, and garlic (if desired). Saute over medium heat until onions are translucent and mushrooms are browned, about 5 minutes.

Combine pasta, sauce, and vegetables, and serve. Great with a fresh green salad and crusty bread.
