Chicken enchiladas made with green sauce, so yummy Chicken enchiladas made with green sauce, so yummy
Number of Servings: 4


    6 oz chicken breast
    4 corn tortilla's
    2 cups la victoria green enchilada sauce
    4 tablespoons sliced black olives
    1 cup kraft free shredded cheese
    1 cup brown rice
    1/4 can green chilli peppers (canned)


1. Boil chicken in water until cooked through
2. shred chicken
3. mix shredded chicken, 1/2 cup cheese, black olives, brown rice, and green chillies in bowl
4. Pour half of green enchilada sauce in baking dish.
5. Coat both sides of tortilla with green enchilada sauce by dipping it in the sauce you poured into the baking dish.
6. Place 1/4 of mixture from bowl into tortilla, roll tortilla and place face down in baking dish. Do this for all for corn tortilla's.
7. Pour remaining green sauce over top of enchilada's,Cover with foil and place in oven for 20 minutes at 350 degrees.
8. Remove foil, sprinkle remaining cheese over top (also if you want you can add extra olives to the top also, makes it look prettier if serving for a party)
9. Place back in oven until cheese is melted on top.

I also like to get some light sour cream to put on top, but that will add to the calories also. This recipe will make four chicken enchiladas. Serving size is one enchilada
