Number of Servings: 6


    Bag of Tortilla Chips
    1 Pound of Ground Turkey Meat
    8 Roma Tomatoes
    1 bag of prewashed Spinach
    1 Packet of Old El Paso Taco Seasoning
    1/2 Shredded Light Mexican Blend Cheese
    2 Tablespoons of Olive Oil
    2/3 Cup of Water


Cook turkey thoroughly in a 10 inch skillet over medium heat in olive oil, stirring occasionally, until no longer pink.
Drain the turkey and stir in taco seasoning mix and 2/3 cup of water.
Cook uncovered over medium heat 3-4 minutes, stirring occasionally, until most of the liquid is absorbed.
On a plate make a bed of spinach. Spoon turkey meat onto spinach. Dice tomatoes and add to salad. Cover with cheese

Serves 6.
