    Chicken Breast, no skin, 5 breast, bone and skin removed
    Rosemary, dried, 1 tsp
    Garlic, 6 cloves, minced
    Pepper, black, .5 tbsp
    Salt, .5 tsp
    Olive Oil, Extra Virgin, 1 tbs
    *Balsamic Vinegar, 1/2 cup (8 tbsp)


Rinse chicken and pat dry. Combine rosemary, garlic, salt, and pepper in small bowl and mix well.
Place chicken in casserole dish sprayed with nonstick cooking spray.
Drizzle olive oil over chicken.
Rub chicken with spice mixture.
Cover and refrigerate overnight.
Preheat oven to 450 degrees. Bake 10 - 15 mins. Turn chicken over. If drippings stick to the pan, add 3 to 4 tbsps of water.
Bake chicken another 15 mins or until no longer pink. (time may vary according to how thick the chicken breasts are - you can butterfly the breast to cut down cooking time). If the dish is dry, add another 1-2 tbsps of water to loosen the drippings.
Drizzle the balsamic vinegar over the chicken while it is in casserole dish. Transfer chicken to plate. Stir the liquid in the dish and drizzle over plated chicken.
