Introduction

This bright red and white salad is delicious and tasty! This bright red and white salad is delicious and tasty!
Number of Servings: 2

Ingredients

    One whole red ripe tomato, sliced and quartered into bite-sized chunks
    two pieces of hearts of palm, cut into bite sizes
    one south beach living (or other low fat brand) mozzarella cheese stick, "strung" into small pieces
    Garlic powder, one or two tiny shakes
    Italian seasoning to taste (or use basil and oregano separately)
    Fresh basil leaves (optional)

Directions

Assemble all ingredients in a small bowl, turning to coat. I like to let it "sit" for a while to let the tomatoes absorb the seasonings, but it's ready to eat right away. Shred the basil leaves into tiny ribbons and put on top just before serving. Serves two. Would be great over a bed of lettuce or mixed greens. Fresh mozzarella would be fantastic but the calories and fat grams would go up slightly.
