Introduction

From the back of Bob's Red Mill Flaxssed Meal, modified just a wee bit (the dried apricots and whole wheat flour). I LOVE these muffins, they are super yummy, and @ under 3g of fat, with 4.5g of fibre and all those vitamins? Is there a better muffin?! Ingredients

    1 cup unbleached white flour
    1/2 cup whole wheat flour
    3/4 cup flaxseed meal
    3/4 cup All Bran cereal
    3/4 cup brown sugar
    2 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    2 tsp cinnamon
    1 1/2 cups finely shredded carrots
    2 peeled and shredded apples
    1/2 cup dried apricots, diced
    3/4 cup skim milk
    2 beaten eggs
    1 tsp vanilla

Directions

Mix together flour, flaxseed meal, bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl.

Stir in carrots, apples and apricots.

Combine milk, beaten eggs and vanilla; pour liquid ingredients into dry ingredients. Stir JUST until ingredients are moistened; DO NOT OVERMIX!

Put 1/4 cup of batter in each muffin cup and bake @ 350 F for 15-20 minutes.

If you use 1/4 cup for each muffin it should make 18 muffins.
