I found this online, then tweaked it to make it healthier. I found this online, then tweaked it to make it healthier.
Number of Servings: 10


    Four large baked potatoes, cooled and cubed
    7 Cups 1% milk
    2/3 C. Light Butter/Margarine
    2/3 C. Flour
    4 green onions, sliced
    10 slices turkey bacon, cooked and crumbled
    1 3/4 Kraft Free cheddar cheese


In a large pot, melt 2/3 C. of light butter over low heat. Add 2/3 c. flour. Stir until combined. Gradually add milk, stirring constantly until sauce is thickened.

Increase heat to medium, then add potatoes and green onions. Cook until bubbly. Decrease heat to low- medium and simmer for 10 minutes. Add turkey bacon and cheddar cheese. Cook until melted. Serve immediately.

If desired, reserve some bacon, cheese and green onions to garnish individual bowls of soup.
