Introduction

This is one variation of my mom's basic coffee cake. One day a friend gave my mom a jar of figs so she just made a cake out of them. You can also use this recipe and substitute bananas, cherries, apples, or just about any other fruit for the figs. When you are using a more or less liquid/juicy fruit, adjust the amount of yogurt you use. Make sure that your total liquids are about 2 cups. This is one variation of my mom's basic coffee cake. Ingredients

    1 c. Figs
    1/2 c. plain yogurt
    1/2 c. cream
    3 eggs
    1 tsp. vanilla
    3 c. flour
    1.5 c. sugar
    1 tsp salt
    1 tsp soda
    1 tsp baking powder
    1tsp cinnamon
    1/2 c. nuts
    1/4 c raisins

Directions

Mix all liquids together then mix with dry ingredients. Poor into 12x8 pan and bake for 15-20 minutes or until a toothpick comes out clean. Makes 16 2x2 inch pieces.
