    4 medium tomatoes
    1/2 cup chopped fresh mushrooms
    1/2 cup chopped onion
    1/3 cup kernel corn
    1 tsp margarine or butter
    1 tbsp grated parmesan cheese
    1 tbsp minced parsley
    1 tbsp dried breadcrumbs
    1/4 tsp salt
    pinch each; pepper and cayenne


Cut thin slice from stem end of each tomato. Scoop out seeds and some pulp; reserve pulp. Turn tomatoes upside down on rack to drain while preparing filling
Cook tomato pulp, mushrooms, onion and corn in margarine over medium-high heat for 5 minutes or until partially cooked and liquid is reduced. Stir in cheese, parsley, breadcrumbs and seasonings.
Spoon corn mixture into tomatoes. Bake in shallow pan in 350 F oven for about 20 minutes or until tomatoes are tender.
