Introduction
These are so easy to make and have very little fat. These are so easy to make and have very little fat.Number of Servings: 1
Ingredients

4 hard boiled eggs
1 Tbsp Hellman's Dijonnaise
1 Tbsp fresh chives (or scallions)
1/8 tsp cayenne pepper
salt (optional) to taste
Directions
Hard boil the eggs (I use the microwave egg-shaped egg cooker - works like a DREAM every time, can cook 4 eggs perfectly in a total of 20 minutes). After cooking and cooling the eggs, peel them and slice them in half lengthwise. Discard 3 of the yolks (keep them if you want, but this will change the calorie/fat content). Divide the remaining yolk among the 8 egg white halves. (I promise this gives enough yolky-flavor!) Put a little dab of dijonnaise on each egg half, sprinkle with cayenne pepper, chives, and salt (if using) and enjoy!!
NOTE: Hellman's dijonnaise is a dijon-mustard flavored fat-free mayonnaise-like product. It's great on all kinds of stuff - great in potato and pasta salads too. You can find it near the mayo in the store. ALSO cayenne pepper is supposed to increase metabolism. :) Enjoy!
