Introduction

A new twist on banana muffins with a secret ingredient passed down by my Norwegian grandmother...cardamom spice. These muffins are extra-delicious with 1/2 C of walntuts added to the batter (this adds about 30 calories per serving, but is great way to increase healthy omegas.) Serve plain, or with a thin layer of light cream cheese or Smart Balance spread. Enjoy! Ingredients

    Whole Wheat Flour, 1 cup
    Oats, 1/2 cup
    Baking Powder, 3 tsp
    Baking Soda, .5 tsp
    Salt, .25 tsp
    Cinnamon, ground, 1.25 tsp
    Cardamom, ground, .5 tsp
    Egg white, 1 serving
    Flax Seed Meal, 1 tbsp
    Water, 3 tbsp
    Applesauce, unsweetened, 1/3 cup
    Ripe Banana, fresh, 1 cup, mashed
    Brown Sugar, 2 tbsp, packed
    Sucralose (like Splenda), 2 tbsp

Directions

1. Preheat oven to 400. Mix dry ingredients in a large mixing bowl.


2. Mix applesauce, water, egg white, and mashed banana together before adding to dry mixture. Stir just until well blended (not too much or the muffins will have a rubbery texture.)


3. Spoon evenly into 12 lined muffin cups.


4. Bake for 12- 15 minutes or until a toothpick inserted into the center of a muffin comes out clean. Let cool before serving.

    These are really delicious. I was out of cardamom and substitued all spice. For such a few calories they have great flavour! - 5/15/09
