    Quick Cooking Oats, 1 cup
    Whole Wheat Flour, 2/3 cup
    White Flour, 2/3 cup
    Splenda Brown Sugar Blend, 12 Tbsp
    Applesauce, unsweetened, 2 Tbsp
    Baking Powder, 1 tsp
    Baking Soda, 1 tsp
    Salt, 1 tsp
    Egg substitute, liquid, 1/4 cup
    Blueberries, fresh, 2 cups
    Buttermilk, lowfat, 2 cups


-Combine oats and buttermilk in a bowl. Cover and let stand 30 minutes.
-Preheat oven to 350.
-Combine buttermilk/oats, flours, Splenda Brown Sugar blend, applesauce, baking powder, baking soda, salt and Egg Beaters. Beat until smooth. Fold in blueberries.
-Bake 15 minutes at 350.

Makes 12 muffins.

** Optional - 1/2 cup chopped walnuts or almonds.
