    1 pkg. Uncle Ben's Ready Rice, Garden Vegetable

    1 tbsp. vegetable oil

    6 oz. rotisserie chicken

    1 c. broccoli, chopped into bite sized pieces

    1/4 c. pearl mushrooms, cut in half

    1 oz. (about 18) cashews, whole or pieces

    2 tbsp. soy sauce

    Salt and pepper to taste.


Boil enough water in a skillet to cover the broccoli and mushrooms. Salt the water and add the vegetables. Cook for about 2 minutes. Meanwhile, chop up 6 oz. of the chicken and microwave the rice. Remove the vegetables and rinse the skillet. Dry the skillet and heat the oil on med. high. Heat the oil. Add the rice and vegetables and cook for about 5 minutes, stirring frequently. Add the chicken. Turn the heat down to medium. Cook, continuing to stir, for another 2 minutes or until heated through. Add the soy sauce, cashews, and salt and pepper to taste. Enjoy!
